Currently AMD CPUs do not limit single cards for folding, and that's my Athlon X2, so I don't think a quadcore Phenom would limit it any for other things.
Besides, AMD is the only side that offers quadruple slot PCI-E with space for dual-slot cards. Phenom didn't limit the Belgians who ran this setup with four 9800GX2s. That's 8 GPUs running CUDA code, it was still blisteringly fast.

I would get a quad. What if you want to expand to four cards later? You need one core for each GPU.

Get an 680i or x38 motherboard with three x16 PCIe slots. You would be able to run 3 dual-slot cards instead of just two.

680a? 4x4? AMD dropped 4x4 over a year ago... it was such a waste of money for NVIDIA.

Since he is planning to stay stock, I doubt he would do case mods (unless it's for more fans because you need better airflow). Those GX2's run hot.
