I'd definately go i5 and hit up the new gpu cards.. even if they're expensive it will lower the prices of the older cards.

For a 4890 and a lot of overclocking you want at least 600w to be remotely safe because Overclocking also involves better cooling which takes up wattage and also the CPU draws more power once it's overclocked, but I'm sure you know that. Better safe than sorry is a good motto to have when OC'ing.

Well try to get your hands on a PSU with multiple +12V-rails, so you can spread the ampere-usage onto different rails

But I think that PSU should handle it as well if you are going to stay everything @ stock
Otherwise search for a more powerfull PSU.

OK, what should I do. I could get a Core i5 750 and an HD4870 1GB or a Phenom II 720 'BE' and a HD4890 OC. What would be the best for gaming and for normal computing?

Best graphics, and strong CPU are what pushes the performance of a game. But for the price similarity atm, I'd pick up an i5, although i think the 4890 is a better choice than a 4870. Perhaps wait up for a price drop from the newer cards?

For the PSU, I would recommend a Corsair HX620. It is a modular, triple 12v rail PSU, rated at 50A. Even though it is a 620w PSU, it can can take a lot more, but not insanely much.
