make a "drug wars" clone....
its a dos based game that lets you travel between like 12 major cities around the world, and the object is to buy low and sell high. Of course you will periodically run into the local police, and you have a few options to do. Ether offer a bribe, but make sure its enough to make it worth their time, or you can run, or you can shoot them, if you have a gun at the time that you can purchase from street dealers periodically... After a set amount of time, i think its 30 'days', which equals 30 travel points, the game ends, and hopefully you have enough money to pay off your debt from the loan shark from the beginning to start your business. Of course the loan shark bothers you on your cell every few days asking for some funds. The sooner you can pay off the shark, the less interest. If you wait until the end of the game to pay if off totally, the debt will likely be way to much to pay off, and the shark send some muscle to make sure you cant do business anymore....

Make a program that predicts the best move (using probabilities) for a given hand in poker, or a given hand in blackjack. Then, have it play 1000's of games in a row, and see if it actually wins or loses money over time.
I did something similar to this with a roulette table... only I had it start at a $5 bet, always bet on black, bet twice as much if it lost, and go back to $5 if it lost. It would win money almost every time, but very slooooowly. Like $3000 in 50,000 games, lol.

50k games lol... You would only be able to do that in vegas, where the casinos are open 24/7 and hope you can stay wake for 5 days, and pray that security wont kick you out...
I like the idea of probability programs. Figuring out a way to make money at something that is supposed to be a gamble stimulates me in more than one way...

i like the drug wars game lol although i'd probably have to make it like candy wars or something haha my teacher would flip if i made drug wars.
