Ive never had H2O cooling BUT I have been very impressed with my VF-900 nd therefore, I can only recommend it! I instantly saw considerable drops in temp, (cant remember how much exact - maybe 10 degres?) compared to the stock cooler. Plus, you can get them quite cheap now - esp in comparison to a water setup!

your big water should cool the VGA with no problem. If in fact you get too much heat, you can always add another radiator like the one in Bigwater 745

do remember that you need to cool the memory chips as most water blocks do not.

I think you should be satisfied with a vf900, keep the loop for your cpu only since an addition of a gpu can considerably add to your overall temps.

yeah, unless you plan on upgrading to custom water over the course of time (which can easily be done with 3/8" tubing) I'd say get a vf900. I've got a vf900 on my 6600GT in my HTPC and it's great. my 7900GT is watercooled, but then again I've got a good custom wc setup that can handle the heat
