What I don't get then is why I get such a temperature difference between the gpu core and the MemIo (+10c)

GPU-z does not show you the memory temps. GPU-z shows the 3 temp sensors on the core. The only way to check the memory temps is to put a thermometer to the chips. This has been confirmed by numerous people in other forums.
