IIRC the Liquid Pro will fill all the small cracks in the CPU and Heatsink permanently, so unless you plan on only using Liquid Pro just stick to OCZ Freeze or MX-2.

I'm using OCZ freeze on CPU's and GPU's. It works well on both and does show significant improvement. At least in my experience it does.

No you can go back easily. It is the best TIM as far as temperature goes. In fact, after you use CLP, and you subsequently use another TIM, it will perform slightly better than it otherwise did due to the CLP having filled in all the microscopic gaps and creating a flatter surface.
