Question: Would these two 4850s be able to Crossfire if I am interested in saving space from having two GPU's with such large fans?

Yeah, you could run both of those. The key thing to remember is that when SLI'ing or Crossfire'ing, for best performance, get two cards that have the same amount of memory, etc. Also, if you buy one that has an overclock, and one that has reference clocks, the OC'ed one will drop it's clocks to the lower card's.

My system load never exceeds 520W while gaming on my UPS monitor. I'm running a Silverstone DA850 with a full water loop, 10 120mm case fans, 3 SATA HDDs, 1 optical drive, MCP655 pump, and 4 UV cathodes.
You'll be ok with an 800W no doubt, but I would try to find a more trusted brand than BFG...I didn't even though they made PSUs.

This should hand any OC you throw at it with the 4850s.
