Any idea on how I can better my performance with my 5870? In crysis at 1900x1200 8xAA I only get single digit fps. It might hit 10 here and there at most. My friends with similar setups seem to get significantly better results in the ~30 range. I have the latest AMD release 9.10. Also, when I tried to OC using CCC (900/1300) my card kept crashing a few minutes into any game. I have CCC set to use app settings with edge-detect. Processor usage only showed 30% in task manager. Not sure what the problem here is. I just don't feel like I'm using this card at its full potential.

What are you settings in CCC?
Could be something in there over riding the application settings? Not every 5870 will do 900/1300 at stock voltage. Might have to use MSI afterburner to bump it up a few milivolts

Does it make a difference to set AA from the Catalyst instead of from within Crysis?
Dunno about your problem really haven't played Crysis in over a year, but updating to the 9.11 beta drivers fixed some AA issues I was having in Champions Online. The price we pay for having these awesome new cards is that the drivers are still pretty new and buggy.

that's about right if you are on high/enthusiast with 8x AA lol
and your settings CCC settings are not default which may sacrifice performance over quality. mine is on boxed multisample AA, standard AI by default

I don't know if this will work , set everything to use app settings in CCC and turn off AI that can cause huge problems i found in crysis.
but if using setting in CCC it would be a good idea to not use them in crysis eg AA, and also as I just found out edge detect aa makes a huge impact on frames switch it to box or narrow tent. I had seen posts earlier today saying when this person used Edge Detect AA it reduced his 5850 to single if not a little more FPS,

he hit it exactly, put as box and just set everything to default. Then click enable triple buffering(better then v-sync and also helps lower fps)
