with my rig could i run two cpu clients (hyperthreading) for folding and with this card how many gpu clients could i run?

I would say that you should run one smp client and 2x gpu clients. I think this would result in most ppd. I've been out of it for a bit as I have moved and no longer pay my own electric bill. But as I recall, this is what did best for me.

Hyperthreading is a technology related to Intel processors.
__________________Anyway, the best way imho to fold with your rig is running 1 smp client for the cpu, and 1 ati client for each gpu. Grunion has found a way to increase ppd by adding a few flags on the cpu client, by thus increasing ppd, you can find how in this thread.
