Default What can I use for fan control?

OK, I currently use a sunbeam fan controller. It has been great, so far, but I am thinking of doing something custom. I am toying with the idea of using 3 seperate knobs mounted right to the case somewhere to control fan speeds. Since I only use 3 channels as it is, I could use the extra drive bay space for either more hdd's or a larger rad.

My problem is, I need to kow what to use. I am a noob when it comes to variable resistors and pots, so please help me. I am looking for the smallest ones I can find that I can mount where I want.

maybe get a little mechanical and use some nichrome wire. have the two leads on both ends of the wire with a length of 1 foot that's coiled so it takes up little space. if you want your fan to be slower then move the leads farther apart vice versa.
