Default I'm toying with the idea of...

...of making one of those Pacman or PONG bar tables with the glass top. Extremely limited Budget, will these parts work?

It will obviously be in a custom case, will this be capable of running linux+Pacman/pong nearly constantly, with some good fans?

For a 24/7 machine, go with the highest quality PSU you can afford. You will need VERY little wattage for the machine, but the quality is important.

Ok. Will that machine also run old-school games like Wolfenstien 3d or DOOM?

Using a Dos emulator, yes, absolutely. DOSBox will do the trick, and there's even a Linux version. http://www.dosbox.com/
