I much prefer Apache, very simple to use. I've yet to actually dabble with IIS to be quite honest. If you're looking to learn or develop with PHP in particular go Apache. It's very simple by installing an All In One package like WAMP or XAMPP as they are simple to use and get you on your feet very quickly. It provides Apache, MySQL and PHP and can be installed with a simple GUI installer. I personally use WAMP to develop PHP based websites. Extremely simple and efficient.

IIS for Windows 2k3 or better
__________________Windows XP IIS you can only setup 1 domain. With Windows 2k3 IIS you can setup more than 1 domain name.

apache is easier to configure, and has alot more modules available (rewrite)..iis though appears to be more lightweight, its completely integrated with the OS, and makes permissions and user accounts a pain in the ass, but once you get it going and get all the modules you need i would go with iis, if you need a free mod rewrite i recommend ionics isapi for iis, took me some time to find a good one
on xp pro your limited to using one domain though

I gave a vote for Apache. It's really the only one I have experience with though. Its done well and handled the task at hand well.
Also checkout lighttpd.

I have to say definatelly apache! There is thousands of tutorials and FAQs on it, easy to use and install and work with.
