Default Capture Device Help

Not sure where to go exactly to post this, but here's the situation I've got.

I've got 2 Sony 1080Ps in the same room with HDMI inputs
A PS3, a 360 Elite, and a DVR/Cable with HDMI Out

So basically I have 3 inputs and 2 outs needed, but of course don't know which device to get that would suit my needs (I've done some looking into HDMI Switches/Splitters so far and I wouldn't want it mirrored, I might want to put the PS3 on one TV and the DVR/Cable on another simultaneously).

Also, and this is where I'm going to need a lot of help, as I understand you can't capture anything with HDCP (i.e. the PS3) at HDMI. Is there anyway to view it in 1080P while having something else downconvert it to component video (say 480 or 720P) for capture on a PC? (So I guess I technically need 3 outs with the last one being component, basically mirroring one of the outs?)

Basically I want to be able to record my gaming or any convos I have in say Playstation Home to a capture source.

Is any of this actually possible? And if so what's the expected price range? (I could go probably about $1000 tops) Any help would be greatly appreciated.
