How come UEI DT150/DT200 and Fluke 51/52 Thermometers record down to -200 C with J and K type probes, but they don't sell probes that go that low?
All the standard J and K probes I've seen only go down to -40C. This, for example. Fluke does sell one industrial probe that goes sub 100, but it doesn't look like it'll easily go in the base of a pot. And $242 USD is pretty darn steep for just a probe. Do typical J and K beaded probes record sub -40 C temps, but just not within the tight accuracy specs of the unit? Or are you guys getting super probes I'm not seeing?

You can use probes rated to -40c without any problems even to -200C. See there: http://www.ocxtreme.org/forumenus/showthread.php?t=4599
