I have one Icy Dock MB672SKGF-BB currently and just received my second one. The enclosures use molex power so i was thinking of using this adapter to let one sata power connnection supply the enclosures. Any problems with this approach?

Yes, it is safe. All my Sata devices are on Molex to 2xSata adaptors, and everything runs fine, so I can't see a problem with doing the same in reverse.
