Regarding the RAM, I wouldn't pay an extra €300 for the speed difference. I don't know what the market is like in your part of the world but damn those numbers seem high to me, I don't know if it would be cheaper to look for some stuff...

For everything but extended periods of 100% full load on every component, I'm going to say that PSU should be enough. If you were to fold 24/7 at 100% then I would probably suggest a kilowatt PSU but if you don't plan on being at 100%...
