I suggest you pin your programs to the Start Menu instead of to the Taskbar.
Pinned browsers will have a little arrow next to them that will display the options that you mentioned, but in the Start Menu.

Extra video memory probably doesn't matter unless you're doing multi-monitor. Windows Vista and Windows 7 will hog roughly half of your system RAM for shared video memory anyways.
