If the cards are OC'ed at the same speeds the GTX580 will always beat the GTX480. Clock per clock the 580 is better because it has 512 cuda cores and the 480 has 480 cores.

Then 2GB should be enough. Although there are a few exceptions, like heavily modded skyrim ,Modded GTA IV ,serious sam 3 and Crysis 2 with Maldo high res textures pack.
