I always use the largest screw driver that will fit the screw (and don't use cheap ones, use ones made of high quality metal and you won't have to buy new screw drivers) - using the largest screw driver minimizes the chance of stripping...
Z77 Offers PCIE 3.0 vs. 2 with Z68, which may be a factor with your 680 (might offer an additional boost in FPS) , other than that, not too much of an upgrade vs. what you have already.

Yes, they just need to be the same size (otherwise the larger one will only have the usable portion of the smaller one, i.e. if you have 1x 500GB + 1X 750GB and RAID 0 then you'll have 1TB )

A 7950 would work fine with that PSU with some room for overclocking it a bit If you're looking at the nvidia side of things, the 660TI is a perfect card, runs cool, overclocks well, and uses less power.
Does it have an OS installed on it? Does it have a s/n? it should have a further model number on the case, otherwise i'm sure if you go into the bios there is plenty of info as well
It will work just fine with the APU no need to get an AMD card - just install the card, install the drivers and proceed as normal, no need to disable anything
