The more phases a motherboard has, the more you can overclock and also the power is delivered more precisely. This means you could even get higher performance.
So don't get the UD3-B3, get the UD3P-B3. The P stands for Performance.

Strange, in your case I'd update the BIOS to the latest version. CPU-Z detects the i5-2500K without any problems. Get into the BIOS and look for the clock speeds on Turbo. Have you left Turbo on while overclocking?
