It's kind of ignorant to state that more VRAM is the some advantage of going AMD.

Since Skyrim looks pretty crappy without mods, I'd say everything 7950 and up should work decently. But for a nice amount of mods over three screens, I think 7950 or 7970 crossfire could be in order.
