There's DCS. Admittedly DCS doesn't have any fighters yet (Flaming Cliffs 3 doesn't count) but the MiG-21 and Huey are releasing VERY soon and Eagle Dynamics has said they're working on a F/A-18C and F-15C a few third party developers...
I have a Cyborg V.5 it's pretty much a piece of aluminum with some sort of plastic coating on top so it won't tear up your mouse. I don't remember the exact price but it was ~$20

Where did you get your printed parts? The Z motor bracket and the pulleys for the Z axis are unfamiliar to me, for the nut on the big extruder gear, something to keep the nuts from turning is a good idea, nylon lock nuts, tension nuts,...

To my knowledge Visual Studio doesn't support writing assembly. You'll probably have to download an assembler, I use Yasm.
