For 1080p, 2gb of ram is fine. My 1gb sli 460s ran pretty much anything except modded skyrim, which my 2gb 670runs perfectly fine.
The 2600k is still a very capable cpu, I believe your gpus are what is holding you back.
I understand it, stability testing takes a lot of time if you are trying to get the lowest voltages for your oc. If you are doing 12 hour tests it can take days till you get the settings right and it can be annoying.
The ridiculous amount of time between gt4 and gt5 really took away any interest I had in the game. With the long waiting period it took for gt5 to come out, one would expect perfection. I did end up buying gt5 but barely played it, and...

leave voltage on auto, set your turbo multiplier to 45 or below.
I usually notice big performance gains when I turn down anti aliasing with pretty minimal loss in quality.
