Turns out there was something up with the bios of this board that if you change the voltage of the ram to run at a specific setting, it doesn't save. Or something like that...

The board apparently doesn't like the ram being set at 2133, with the voltages and settings the XMB profile has anyway. I don't really know how to mess with that so I'll be stuck at 1866 ram for the time being.
