Dual 7970 should be able to max everything at 2560*1440. Maxing everything at 3x 2560*1440 is another story though.

Forget about 120hz, and just get a nice 2560*1440/1600 monitor, it will do you much better than a faster refresh rate, plus it will allow you to take higher advantage of your system.
