I would generally say nVidia, but if you're going with AMD, get a board for Crossfire and go with the 3x4890's. That'd be a killer set up

Here's a good build based on what you need. I do not know much about AMD, so I will reccomend you an i7 rig FOR THE SOLE REASON THAT YOU ARE CONSIDERING INTEL.
MOBO: ASUS P6T Deluxe V2 CPU: Intel Core i7 920 RAM: 3, 6, or 12 GB? Let's just say 6. Corsair Dominator 6GB DDR3 1600 (PC3 12800) GFX: Out of the 3 XFX 4890 models at Newegg.com, I linked you the lowest clocked and cheapest model, so you can overclock it if you'd like. OVERCLOCKED VIDEO CARDS REQUIRE THIRD-PARTY COOLING. Link. PSU: Corsair CMPSU-850HX 850W (Modular) Heatsink: A Prolimatech Megahalem with some San Aces will do you well. HDD: 2 of these will do you good, just as you selected. Amidoinitrite?

i would get the asus one as it probably (top bios) has the ability to change the voltage so you can get a higher overclock if desired.
