neither... Sli/Crossfire only work with 4 GPU's together.
That would be 2 4870's vs 2 GTX295's

Allow me to explain.
both the HD 4870 x2 and GTX 295 are dual GPU cards. Thus, one card is similar to crossfireX or SLI in that its 2 gpu's rendering one scene. Both cards only allow bridging with one other of itself. So 2x HD 4870 x2's in crossfireX is 4GPU's total. 2x GTX 295's in SLI is 4GPU's total as well.

Wait, so technically speaking, it is possible to have more than 2 295's in SLI? I figured Quad-SLI was the max.

no its not possible as both cards only allow them to be connected to one other card, the gpus on the each card work in a sort of crossfire/sli thats internal then both those internal sli/crossfire work with the other internal CF/sli creating 3 sets of multi computing 2 internal ones then an external one which is simply the two internal ones working together..... did that make any sense? at all?

Just to add to this: You can technically have more than 2x 295's or 2x 4870's in a rig, just not in unified SLI or CF configurations. So folders needn't worry about this limitation. Just don't expect to 3d benchmark with it
