Given the choice between Crossfiring my 4890 and putting in a 9800GT for PhysX, which method would improve gaming performance more?

I think adding a second 4890 would improve performance a lot more than getting a PhysX card. But, it might depend on the game.

CrossFireX, PhysX will only improve in some games, but with 2 ATI Radeon HD 4890, one already kills games, a second will destroy them

Unless you only play Batman AA, and most likely even then, crossfire is the obvious choice. Your frame rates will go up massively in most games. PhysX doesn't have enough of a hold on games to be worth it, IMO. There are very few recent games that don't support Crossfire.

if you turned on phsix in mirrors edge you'd see no improvements, i had some lagy moments even with my cf setup, when millions of windows get shattered, but thats only one game so just my 2 cents

Crossfire. Period. Even in Batman AA if you forced 8xAA you'll still get better frame rates. Although, if you got a board with more PCIe slots *cough* MSI 790FX-GD70*cough* then you could use both.

what is your CPU clocked at?
If you overclock your CPU you might see a slight jump in FPS. Using crossfire is a hell lot easier and better then having an ati gpu + nvidia physx

Drastically increased performance in a number of games (Crossfire)
vs. Minimal visual enhancements in a relatively short list of games (PhysX) Hmmmmm..........
