On a variable resistor.... which pin do I solder positive and which to ground? There are 3 on mine.

A 3-pin variable resistor is often called a potentiometer, while two-pins are usually rheostats. (Just for future reference to avoid confusion)
With the shaft facing you and the lugs down, far left will be ground, center will be output, and far right will be input. (This is a general rule - your pot might vary, so look up the datasheet for yours and make sure less you fry something)
