How is this any different from Apple, other than that the prices will probably be a teeny bit cheaper for a system?

I bet you that any of the OSX bundled systems will still be significantly more expensive than a comparably hardware equipped Windows system, but still cheaper than a Mac. The only thing this benefits is Psystar and the companies making the pre-configured hardware systems. Doesn't really change the general scenario to the consumers, only now there will be 2 sources of Apple OSX computers instead of just one. Maybe Mac prices will come down a bit, but a majority of people who buy Mac also do it for reasons other than the OS. I think this will affect only a tiny part of the enthusiast market--not enough to really profit Psystar or the future manufacturers because, as people in this thread have pointed out, people are already using "hackintosh" systems. And in general, people who want to buy a Mac will probably still buy Apple-branded systems.
EULA != law. All Apple can say is that by violating the EULA, you can't have access to updates

And I've heard the polar opposite about macs: that the primary reason to own one is for the software / OS.

LOL I LOVE how Apple is struggling so hard with these people. It tickles me, it's almost like watching a kid trying to swing punches at his bully that he can't reach because he's being held away by the bully with his arm stretched out.

Except Psystar is the small guy here. So its more like a bully tring to swing punches at a small kid, but he can't hit him because he is so greedy and his money bags are getting in the way.

EULA's are nonsense when they contain illegal text.
