The screen asking you to press delete or F3 may probably be loading before your monitor is completely of standby? try pressing the key as soon as you hit the power button.
Not sure about the second question though i highly doubt you will loose anything once you set the new bios to read the drives as it should for raid.

The BIOS is stored on the motherboard - not the hard drives. Flashing the BIOS in itself will not cause you to lose any of your data - but if you don't set the BIOS to RAID again after flashing, and it tries to boot windows without it enabled, your array will be corrupted.

before flashing your bios set it to default/factory settings(reset it).......after it's flashed set your drives back to raid configuration

i just did this a couple of days back...all you have to do is RESET the sata controller back to "RAID" after flashing the BIOS

If your board is anything like my gigabyte P45 UD3P, you should have an inbuilt flashing tool (forgot what it's called)
then all you gotta do is load the new BIOS onto a small flash drive, press the button at the POST screen, and confirm you want to flash.
