I would also throw in another hard drive for RAID0 (Especially if you have a way to back up important data). So instead of getting a 500GB maybe get 2x 250GB. The speed increase is really worth it.

As far as I know, the only x16/x16/x16 is the EVGA Classified, Because it has the NF200 chip

With that budget, you're on the right track with the i7. Instead of getting two video cards though, I would go with one high-end card and a high-end SSD (or two). That's the biggest bottleneck for computers right now - hard drives. May as well go for the best when you're spending that much money! A single high-end card will max out anything you want these days, and you can always add another later on. SSDs will benefit you TODAY though. Especially for the photo/video editing you're talking about.

SB.Hawx, what are you doing for a monitor?
if you are getting anything smaller than 23/24" (1920x1080/1200) then the triple SLI wouldn't be worth it because it is only necessary at higher resolutions.
