The dedicated GPU is overkill for a "work" pc, as is that processor (unless you're doing things like database work).
Using this mobo, PSU, and proc will be plenty for her use, helps save on the budget, and simplifies the system (less risk of "break down"). Take the money you saved and get her a better 19 or 22" LCD, which is more to here benefit than a beefier proc or vid card.

RAID 1, would be good for you mom so that she doesn't loose her work. When you setup RAID 1 you install 2 identical HDD's. The computer only See's 1 drive. The raid controller automatically copys all data from the main drive to the backup, so that if the main drive were to crash you can switch to the seconday with very little downtime and "hopefully" no loss of data.
