One GTX260 will be plenty for your res.
Heres an i7 + EVGA 260 combo

HDD: Western Digital Caviar Black 500GB x2

The 700w would be enough to SLi the 260s, but unless you are running at 1920x1200 or bigger it would be worth it.

I'd switch the motherboard for a Asus or Gigabyte. And get a WD hdd.

I can't find any mobos around that pricerange by Asus or Gigabyte that support SLI mode.

Save a couple of dollars and get OCZ freeze thermal compound instead. It's one of the best and outperforms the popular artic silver 5

The rest of the build looks real good. I agree with the Xiggy S1283 for CPU cooler, and the OCZ PSU is more than adequate for your needs and then some (SLI GTX 260's).

That CPU cooler is HUGE, not sure if its gunna fit in that 300.
