Don't see the need for the 4850... that's way overkill. Go with a 4830, or 46xx, or even 43xx. Other than that, looks like a fantastic build. Pretty much exactly what I would do with said budget.

I will go get a cheaper video card, but upgrade the CPU a little, perhaps grab something from Microcenter if you have one near you,
or just get the E5200

I'd also say 790GX, but with an x2 BE.
cheapest i could find: 790gx asrock http://www.newegg.com/Product/Produc...82E16813157162 7850 BE http://www.newegg.com/Product/Produc...82E16819103678 isn't that enough to multitask and HD playback? saves you about $140.

As I said before, I'd drop the videocard down to a 4670 and add a Blu-Ray drive, since one of the things she wants it to do is play HD video. How will a 4850 keep the system alive longer than a 4670? The 4850 isn't needed since it won't be used for gaming. The E2180 always would have been more than enough, and it's not worth extra money for faster ram. I game and I still only use 800mhz ram.
