I'm wondering, the Atom 330 1.6GHZ Dual core with hyperthreading processor, is in theory near the performance of my current Pentium 4. I am interested in it due to it's extremely low TDP and Price (About $150 with a motherboard). I'm wondering, would this be able to play 720p mkv files?

I think it should work just fine as long as you have at least a gig of RAM.

I'm thinking since it only has support for 1 DDR2 DIMM that i would pick up one of the OCZ Vista Ready 800MHZ 2GB. What's the point of buying the Gold, Platnium or XTC for this thing, it's not like I'll notice much of a difference.
__________________Also, just for the hell of saving energy, I might bundle this with a 500GB Western Digital Caviar Green (the new models, not the old power sucking, performance degrading one!)

I've always been able to play 720 on my single core 1.6ghz turion lappy. Seeing how it's older than the atom and has 1 core, you should be fine (especially if you get coreavc).

It should be able to do that and great for a HTPC
