I'd stick with your Opty until Nehalem comes out (or AMD gets its act together). That's a mean rig you've got, and an Opteron @ 3Ghz is nothing to sneeze at. Spend the money on a new graphics card and a nice 20-22" widescreen monitor instead.

nah, everytime i go to build a new system, there's always something that's coming out that could be worth waiting on. by the time nehalem is released and DDR3 drops in price enough and quick connect motherboards come down in price enough to make it worth buying, i will be ready to upgrade the above build.

That's faster than I usually upgrade, but you know your pace. The build itself looks great, stick with it. I might consider a new power supply, but that won't be necessary until the next time around either.
