Default Building the ULTIMATE pc... money no object

I have recently come into possession of quite a large sum of money (long story). Since computers are my life hobby, I'd like to use a portion of the money to build the absolute best possible PC.
this isn't serious but could still be fun, please don't spoil if you notice
Now you can go nuts with dual/quad socket server boards and hundreds of gigabytes of memory and such, but that is not the aim of this build. Let's keep it to a single socket LGA1366 motherboard, please.

I have compiled a preliminary list of proposed components to be used in the build:

Case:
Lian-Li Tyr PC-X2000
Motherboard:
eVGA Classified E759
CPU:
Core i7 975 EE
GPU (two of them):
Asus GTX295 Mars
PhysX:
eVGA GTX285 FTW or eVGA GTX285 2GB FTW
Sound Card:
Auzentech X-Fi HomeTheater HD
RAM (two of them):
Corsair Dominator GT 6GB 2000MHz 7-8-7-20
Hard Drive (6 of them, RAID 0):
Solidata X1-256
Optical Drive (two of them):
Pioneer BDR-203
PSU:
PCP&C Turbo-Cool 1200 ESA
Monitor:
NEC MultiSync LCD3090W-BK-SV
Surge Suppressor:
Tripp-Lite HTPOWERBAR10
Headphones:
Sennheiser HD 800
Microphone:
Logitech USB Desktop Mic
Mouse:
Razer Diamondback 3G or Razer DeathAdder
Mouse Pad:
Razer Destructor
Keyboard:
Deck Legend

What additions/changes do you guys think should be made here? Also, I haven't decided what I'd like to do for the CPU and possibly the GPU cooling. I would very much like something that is low maintenance and does not sound like a leaf blower and can be entirely contained in the case. I will be overclocking. I would probably be leaning towards water, but is there anything else I should be looking at?

Please note I am not interested in anything particularly flashy, which is why I have selected a case with no window. That kind of stuff doesn't really appeal to me, and actually, I think it would make it look cheap. But I do have an open mind so if you have any suggestions for something esoteric and flashy, I'd listen.

Finally, to reiterate, the point of this is not performance per dollar!

So why is it that you don't want a dual LGA1366 board, two i7 965 equivalents, and like 24GB of registered RAM?

Edit: Well, besides the obvious fact that you can't SLI on a 55x0 board.

I'd change the gpu to 3 x gtx 285 personally.
Those cards are sick and will outperform 295 in tri-sli.
