I finally got my P5W DH Deluxe and my E6400 C2D to run stable at 3.1ghz for 12hrs and still going. I left it up to the mobo to set the memory timings. Now my question is, should I leave it alone or should I try to get it at my memory stock setting of 5-5-5-15? Or should I try to push it even more? Like going to 4-4-4-12? Is that even possible?

CAS4 would be a nice improvement. If you're running at or below reference clock speed, you might be able to achieve it depending on the quality of the ICs (PC2-8000 doesn't sound like Micron D9s). If you're higher than 1000MHz, you probably won't get tighter than CAS5.
By all means, set the timings manually... but make sure you have EPP or SLI MEMORY set to OFF in BIOS.
