I currently have the eVGA 680i A1 motherboard and I'm using 2x1GB of Crucial Ballistix DDR2 800MHz. I was wondering if the 2x2GB of OCZ Platinum 1066 would run on my board.

You can run 2x2Gb@1066 (or higher) but not 4x1Gb@1066 without reflash your memory SPD.
Read this from OCZ
