Does anyone know why some Mac programs have the smooth grey boarder, and some have the brushed aluminum boarder? As far as I can tell, its completely random...

Its purely a design element. When you program for Mac, you have the option of what background to use. The programmers simply chose either one. The last time I looked though, Apple was phasing out the brushed aluminum.
