ummm firefox visualhub for video conversion, handbrake for dvd ripping, miro for playing those .avi movies just google open source mac apps and youll get a ton

If you're a bittorrent user, Transmission is a great app, probably the best bittorrent client on the mac.
Adium for IMing.
Firefox for web browsing.
If you're into games, Nexuiz is pretty good, and it's multiplatform too, so your Windows and Linux friends can play it with you.
GimpShop is a pretty good open source Photoshop type thing.
VLC is pretty much the definitive play-anything-you-want-it-to media app.

That's all I can think of off the top of my head.

what are you looking for? video/picture editing? music stuff?

firefox is awesome

I liked transparent dock (it adds many features including transparency to the dock), but I'm not sure if it's compatible with Leopard.
