Start backing up but wait a little, we've only had 3 hours' worth of IT brains visiting your thread so far. Someone out there's gotta have a solution for this.

I fished this here:
A somewhat similar problem with a fix that'll basically force the OS to I believe rebuild the whole resolution list

Code:
I had similar problem with Nvida Geforce 8600GT Resolution would Change from 1024 to 800 on reboot

Only with SP2 No Problem with SP1

Made Reg Changes

All the Below Defaults were 800 x 660

Noticed I didn't have these Defaults on any of my other Machines

I removed them all

this will show you how to change the resolution to anything you want via the registry
This is another guide for the same purpose

But I'm not sure it'll actually add the resolution to your list of selectable choices

thats what i did a while ago and when i rebooted it was 1440x900 again

u can try:
1 lower refresh rate...
2 UNINSTALL display from device manager, which should make ALL resolutions possible.
Pick your refresh rate, then resolution.

(keep pressing esc if your monitor doesnt support a certain res/refresh)


note: the resolution is then changed for the desktop at that time, so its possible that it doesnt keep the resolution for games, u should do all the steps after each reboot, when u want the resolution in a game

refresh rate is on lowest, and after unistalling monitor the next high res is 1600x1200 which is too high
