I have a 2009 Samsung 40" 120Hz LCD (LN40B630) 1920x1080. What should I use, DVI To HDMI or VGA?

DVI, you can send sound through it too if you want. HDMI and DVI are almost identical, both digital, except HDMI also does sound. And I agree with JK, can't give you a technical answer.

Use DVI to HDMI. It's digital, unlike analog VGA, and will probably be more supported by your other gear in the future.

I don't believe that VGA can carry a 1920x1080 signal.

Well I switched over to DVI to HDMI and it looks terrible!

Definitely the HDMI, that video card will pump out 7.1 sound over DVI-->HDMI.
