Do cables need to break-in, aka, use them for a while, then speed increases?

It could make a small difference if the cable is around a source of interference...but if its STP, it won't matter.

Side question. How can you tell if a cable you have is Cat5/Cat5e or Cat6 if it's not labled on the cable itself?

Chances are it is Cat 5/Cat 5e.

If it is Cat 6 it will be fairly new, and fairly expensive.

If you find Ethernet cable, chances are it is Cat 5/Cat 5e.
