I read that, I mean like.. if I overclock the slow card only (non-SLi) or change the bios to match up with the fast card and SLi it after, will that work?

If you change the BIOS so that the clocks match the faster card then obviously both cards will run at the same speed. Whatever overclock settings you make will always be applied to both cards simultaneously when SLi is enabled in the nVidia control panel.

Ok well Ive found a way around not being able to run 3 monitors with SLi enabled (ie 2 x 8800's running in SLi on the main monitor, and 1 x 8600 running the other 2 monitors).
It seems the 'trick' is in disabling the 3rd vid card, then setting up SLi, rebooting, then enabling the 3rd again and setting up as normal. Link: http://forums.slizone.com/index.php?showtopic=14989
