You guys might want to check out Godane’s Development Blog, maybe get in touch with him and have him help out if you guys run into any snags. He's working on Archiso-live, basically an Arch LiveCD with XFCE, and he's getting there.

..not. Although some have the option to do so. Usually it's some small distros that allow copying everything to RAM and then proceeding with booting to the OS. Most Live CDs (I could be wrong here of course) copy files to RAM on the fly as you request them.
