Server 2003 definitly. If you are running a server for ANYTHING other then basic local file and print shareing, use a server OS. Apart from being more secure, they offer features that simply dont exist for XP Pro. I just got done installing SBS 2003 on my Exchange server, and it is very diferant from any other MS operating system I have ever worked with.
