79C is nothing, my 8800gts sometimes runs over 90C when I fold. GPUs are meant to take a lot of heat, some even go past 100C safely.

Its absolutely fine. The GPU's are designed to withstand higher temps. You could maybe increase your case air-flow to better cool your GPU if you want to lower the temps or switch to Water cooling.

The viewer crashes with anything ATi related for some reason. Whether it be the GPU or motherboard. When I had 2 GSO's folding on my CFX board, if I opened the viewer, it would lock up then crash completely.

It doesn't do this with nvidia based chipsets as I can use the viewer on my NF4 boards.

i recommend you run t smp clients
set the gpu machine id to 16 cpu1 client 15 and cpu2 client to 14 for max performance output

My GTX 275 was pushing 85C after folding for a while. I did turn the fan up a bit, just to be safe, but it was completely stable at 85C, anyways.

If I got an NVIDIA card, would it go a lot faster? Like a GTX 295, or 2 285's in SLI?

EDIT: Or, would a second 4890 suffice?

Yes, Nvidia cards significantly outputs more points than ATI counterparts. A 285 by itself would earn a lot more points than a 4890.
