With 3, it's much easier, yeah.

Get the MatroxTripleHead2Go adapter, which turns 3 monitors into 1 gigantic widescreen. And then, the adapter itself will upscale games that support it into the giant resolution. It works with all Source games, Cysis, and a whole bunch.

Youtube it, people post vids of the games that work in TripleHead2Go and my it is DAMN sexy.

Can't use a notebook display with an external source. Bummer, but just how it is.

The Flight Sim games all support multiple monitors by offering a different view that you can place on another screen. Also I believe there was a Star Trek game released that touted it's multi monitor support.

Supreme Commander is the only game I know that natively supports dual monitors... the other games listed simply work with a very wide resolution, they don't really 'support' it as far as I'm concerned.

it was star trek armada 2(II) and i have it but i cant get the multi-monitor to work on it for some reason...
